Rainy Day Banana Bread


the BEST banana bread (adapted from Jessica Seinfeld) - and slightly healthy too!
  • 3/4 cup whole wheat flour (I like whole wheat white)
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup brown sugar, firmly packed
  • 1/4 cup canola oil (can use vegetable too)
  • 2 large egg whites
  • 4 very ripe bananas
  • 1 teaspoon pure vanilla extract
Directions
Preheat oven to 350 F.  Coat a loaf pan (9x5-inch) with cooking spray.  Mix flours, baking soda, powder, salt, and cinnamon together in a medium bowl.  In a large mixing bowl, mix the sugar and oil until well combined.  Mix in egg whites, bananas, and vanilla.  Add flour mixture and mix until just combined.  Pour batter into loaf pan and bake for 50-60 minutes (until toothpick comes clean).
