Quinoa Salad
Too much cooking


Grilled Corn and Cheese Cakes (based off of Giada's recipe)
2 cups frozen corn, thawed
  • 3/4 cup shredded smoked mozzarella (3 ounces)
  • 1 cup panko crumbs, divided
  • 4-5 chopped green onions
  • 1 tablespoon low-fat plain greek yogurt
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup extra-virgin olive oil

  • In a food processor, pulse corn into a chunky puree. Place in a medium bowl and add cheese, 1/2 cup panko crumbs, green onions, yogurt, salt, and pepper; mix until combined. Form the mixture into ~10 balls and then flatten into patties, refrigerate for 30 minutes.

  • Coat patties with remaining panko crumbs and drizzle with olive oil. Grill for 4 to 5 minutes on each side, or until golden brown.

Quinoa Salad (Frost original)
1 cup dried quinoa
1 tablespoon olive oil
4-5 green onions, chopped
1/2 cup dried cranberries, roughly chopped
1/4 cup sliced raw almonds
2 small-medium sized zucchinis shredded
1 small bunch chopped fresh cilantro
salt and pepper to taste

Follow package ingredients to cook quinoa, adding olive oil and green onions.  Let quinoa cool completely, add cranberries, almonds, zucchini, cilantro, salt, and pepper.  Eat!
