Cookies!

I have always loved anything with oats in it, and who doesn't love cookies?  This brings me to a delicious and healthy recipe, that's easy to cook and a great project for a cold winter day...


Oatmeal Chocolate Chip Cookies
(makes ~24 cookies)
  • 1 very ripe banana
  • 1/3 cup of canola oil
  • 1/2 cup of sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup whole wheat flour
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 2 cups of rolled oats
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons of skim milk (if needed)
  • cooking spray
Directions:
  1. Preheat oven to 350 F.
  2. Mix banana, oil, and sugar in a large bowl; add vanilla and salt.  Mix well.
  3. Add flours, baking soda, and cinnamon.  Mix until combined well.  Add oats and chocolate chips, and stir.
  4. If mixture is dry add a few tablespoons of skim milk.  Make balls the size of a ping pong ball out of the batter with wet hands.  Lightly flatten them out on a cookie sheet lined with parchment paper and coated with cooking spray.  (Re-wet hands as needed)
  5. Bake cookies for ~12 minutes or until golden brown.  Place on a cooling rack for 2 minutes and eat!
