Cookies!
I have always loved anything with oats in it, and who doesn't love cookies? This brings me to a delicious and healthy recipe, that's easy to cook and a great project for a cold winter day...
Oatmeal Chocolate Chip Cookies
(makes ~24 cookies)
- 1 very ripe banana
- 1/3 cup of canola oil
- 1/2 cup of sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup whole wheat flour
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon cinnamon
- 2 cups of rolled oats
- 1 cup semi-sweet chocolate chips
- 2 tablespoons of skim milk (if needed)
- cooking spray
Directions:
- Preheat oven to 350 F.
- Mix banana, oil, and sugar in a large bowl; add vanilla and salt. Mix well.
- Add flours, baking soda, and cinnamon. Mix until combined well. Add oats and chocolate chips, and stir.
- If mixture is dry add a few tablespoons of skim milk. Make balls the size of a ping pong ball out of the batter with wet hands. Lightly flatten them out on a cookie sheet lined with parchment paper and coated with cooking spray. (Re-wet hands as needed)
- Bake cookies for ~12 minutes or until golden brown. Place on a cooling rack for 2 minutes and eat!
